Don't Fear That Expired Food

Now that the Christmas feast is over, you may be looking at all the extra food you made, or the food that you brought home from the store that never even got opened.

And you may be wondering: How long can I keep this? What if it's past its expiration date? Who even comes up with those dates on food, anyway, and what do they mean?

Here's the short answer: Those "sell-by" dates are there to protect the reputation of the food. They have very little to do with food safety. If you're worried whether food is still OK to eat, just smell it.

One of the places that knows most about the shelf life of food is a scientific establishment in Livermore, Calif., called the National Food Lab. At the NFL, they put food on shelves for days, or weeks, or even years, to see how it holds up.

Sometimes, they'll try to accelerate the process with 90-degree heat and high humidity.

And then, from time to time, they'll take some of the food ? whether it's bagged salad greens, breakfast cereal, or fruit juice ? off the shelf and place it in front of a highly trained panel of experts who check the taste and smell and texture.

"You would think that everybody can taste and smell food, but some of us are much better at it than others," says Jena Roberts, vice president for business development at the NFL. The lab has 40 of these food tasters on staff. "They are the most fit people in the group," says Roberts. "Because they don't eat the food. They expectorate it. Which is a fancy college word for spit it in a cup."

The experts give the food grades, in numbers. The numbers go down as the food gets older. Bread gets stale. Salad dressings can start to taste rancid.

John Ruff, president of the Institute of Food Technologists in Chicago, says the companies that sell this food take a look at those grades and decide where they will draw the line, to protect the reputation of their products.

"If the product was designed, let's say, to be a 7 when it was fresh, you may choose that at 6.2, it's gotten to the point where [you] don't want it to be on the market any more," he says.

"If it's 6.0, would most people still find it reasonably good? Absolutely," he says. "But companies want people to taste their products as best they can at the optimum, because that's how they maintain their business and their market shares."

This is all organized and carried out by food companies; there's no federal law that requires dates on any food except for infant formula, although some states do require sell-by dates on milk or meat.

Still, these dates don't really tell you anything about whether food is safe.

According to Ruff, most products are safe to eat long after their expiration date. In fact, even meat or milk that's clearly starting to spoil is not necessarily dangerous. "Very often, you won't eat it because of the smell, and you probably won't like the taste, but in a lot of cases, it's unlikely to cause you illness," he says.

That's because it's not the food that sat on the shelf too long that makes you sick, Ruff says. It's the food that got contaminated with Salmonella or Listeria bacteria, or disease-causing strains of E. coli. And that food might not smell bad as it might have arrived in the store only yesterday.

"In 40 years, in eight countries, if I think of major product recalls and food poisoning outbreaks, I can't think of [one] that was driven by a shelf-life issue," Ruff says.

Canned food, in particular, can stay safe for a really long time. In 1974, scientists at the National Food Processors Association in Washington, D.C., got their hands on several old cans of food.

Janet Dudek, now semi-retired and living in Vienna, Va., was among the scientists who analyzed this old food. Her assignment was a can of corn, vintage 1934, that was found in someone's basement in California.

When they opened the can, Dudek says, the contents looked and smelled pretty much like ordinary canned corn. Analysis showed that it had most of the usual complement of nutrients ? although there were lower levels of a few, such as vitamin C.

Results were similar for century-old canned oysters, tomatoes, and red peppers in cans recovered from a sunken steamboat, buried in river silt near Omaha, Neb.

Dudek says, as far as she knows, nobody actually tasted this food. That just wasn't done, she says. But they probably could have. "It would have been safe to eat if the can itself maintained its integrity," she says.

When food in supermarkets passes its sell-by date, though, it gets swept off the shelves. Often, it's donated to food banks. Sometimes it's auctioned off.

But if you discover such food in your pantry at home, there's really no reason to throw it out. Ruff says you should just sniff the meat and milk. If it smells funny, go ahead and toss it.

But for most foods, don't worry. "As a consumer, I've certainly opened packages of food that were five years old."

Cats and song tributes dominate viral videos

This year, we discovered it was possible to mash up wildly divergent parts of pop culture (Cookie Monster and The Dark Knight), or pretend we were riding horses ("Gangnam Style" tributes) or just watch a cat spin on a turntable. And then we sent those videos around. Everywhere. To everyone.

Oil prices lower as US 'fiscal cliff' approaches

The price of oil drifted further below $89 a barrel on Monday in subdued holiday-thinned trading and amid ongoing concerns over the U.S. budget.

By early afternoon in Europe, benchmark oil for February delivery was down 16 cents to $88.50 a barrel in electronic trading on the New York Mercantile Exchange. The contract fell $1.47 Friday to finish at $88.66 per barrel in New York, the contract's lowest point in three weeks. It dropped to $87.96 per barrel at one point Friday.

"With politicians out on recess, sovereign credit markets closed and a general lack of vigor in seasonal markets, there's not much to chew on today with crude oil prices edging lower in decidedly thin volume," said a report from Sucden Financial Research in London.

When trading resumes after the Christmas break, the focus across all financial markets will likely remain on the budget discussions between the White House and Congress. If they don't reach a deal by Jan. 1, steep tax increases and government spending cuts will automatically take effect ? the so-called "fiscal cliff" ? that will jar the U.S. economy and potentially throw it into recession. Oil prices tend to drop when concerns over the state of one of the world's major economies arise as it could reduce demand for energy.

A weaker dollar helped keep oil prices from a sharper fall by making crude cheaper ? and a more attractive investment ? for traders using other currencies. The euro was up to $1.3231 on Monday from $1.3184 on Friday.

Brent crude, used to price international varieties of oil, was down 70 cents to $108.27 per barrel in London.

In other energy futures trading on the New York Mercantile Exchange:

? Natural gas retreated 9.2 cents to $3.359 per 1,000 cubic feet.

? Heating oil lost 1.14 cents to $2.9988 a gallon.

? Wholesale gasoline fell 1.18 cents to $2.704 a gallon.

Some 40 million people depend on the Colorado River Basin for water but warmer weather from rising greenhouse gas levels and a growing population may signal water shortages ahead. In a new study in Nature Climate Change, climate modelers at Columbia University's Lamont-Doherty Earth Observatory predict a 10 percent drop in the Colorado River's flow in the next few decades, enough to disrupt longtime water-sharing agreements between farms and cities across the American Southwest, from Denver to Los Angeles to Tucson, and through California's Imperial Valley.

"It may not sound like a phenomenally large amount except the water and the river is already over-allocated," said Richard Seager, a climate scientist at Columbia University's Lamont-Doherty Earth Observatory and lead author of the new study.

The study expands on findings published in 2007 in the journal Science that the American Southwest is becoming more arid as temperatures rise and rainfall patterns shift from human-caused climate change. It also comes on the heels of a major study of the Colorado River Basin by the U.S. Department of Interior that projected longer and more severe droughts by 2060, and a 9 percent decline in the Colorado's flows.

"The projections are spot on," said Bradley Udall, an expert on hydrology and policy of the American West, at the University of Colorado, Boulder. "Everyone wondered what the next generation of models would say. Now we have a study that suggests we better take seriously the drying projections ahead."

The present study narrows in on three key regions for water managersthe Colorado River headwaters, the greater California-Nevada region and Texas, which gets nearly all of its water from within state borders. The study makes use of the latest models (those used by the Intergovernmental Panel on Climate Change in its Fifth Assessment Report due out next fall), to estimate seasonal changes in precipitation, evaporation, water runoff and soil moisture in the near future, 2021-2040. "It's a much finer grain picture than the one we had in 2007," said Seager.

Drying is expected in all three regions, as warmer temperatures trigger more evaporation, even in places that may see greater seasonal rain or snowfall, the study found. The models project that temperatures in 2021-2040 will be 1 to 2 degrees Celsius warmer than now. The Colorado headwaters are expected to see more precipitation on average, but annual stream flow is expected to decline by 10 percent, and as much as 25 percent during springtime, as warmer temperatures boost evaporation, the study found. California and Nevada will also see big changes in spring, with a projected 20 percent drop in spring runoff; Texas will overall become drier with a 10 percent decline in annual runoff. For Texas the models predict that precipitation will decrease and evaporation rates will also go down in spring and summer, but only because "there is no moisture to evaporate," said study co-author Mingfang Ting, a climate scientist at Lamont-Doherty.

Population growth in the Southwest is putting added pressure on regional water resources. To put the Colorado flow projections in context, a 10 percent decline is about five times the amount of water that Las Vegas uses in a year, said Udall. With alternate water sources tapped out, the West will likely have to meet the decline by cutting back on water use. "You can't go build another water project," he said. "That's what makes this problem so difficult."

CHICAGO (CBS) ? A group of clergy members is pushing to legalize same-sex marriage in Illinois.

More than 200 pastors and rabbis released an open letter calling for lawmakers to approve legislation allowing gay marriage.

They say it is a matter of equality, conscience and justice. The group plans to send the letter to state lawmakers.

?Yesterday was a milestone in the discussion because religious leaders from across Illinois from a wide array of faiths came together today saying there is no reason why gay and lesbian couples in loving committed relationships should not be afforded the freedom to marry,? said Bernard Cherkasov, CEO of Equality Illinois.

State Representative Greg Harris (D-Chicago) and State Senator Heather Steans (D-Chicago) say they will call for a vote on the bill when lawmakers gather in January.

QuickBooks Online Plus


The last time I reviewed QuickBooks Online Plus, I gave it three and a half stars and no Editors' Choice award. Intuit has done a lot of work on the Web-based solution since then. It has a revamped interface, for one thing, making it look lighter and fresher and more state-of-the-art. There are more add-ons in the App Center and additional time-saving tools, like batch processes and the innovative Income List.

But it still has three notable deficits. First, price. If you use the top-of-the-line app, Online Plus with Payroll, you'll pay $63.16 a month for five users?more, of course, for more team members. Second, it still does not support multiple currencies. Finally, QuickBooks Online's lack of a robust tablet app is troubling. QuickBooks Mobile, which runs on the iPhone, Android, and Blackberry smartphones, offers a very limited set of tools. And, while you can access QuickBooks Online from within a tablet's browser or a remote-access solution like LogMeIn or through a third-party application called QBooks (which actually synchronizes with QuickBooks desktop data), Intuit has yet to produce a tablet-optimized version of QuickBooks Online. Competitor Kashoo launched a tablet-based app a year and a half ago.

Still the Best
In every other area, however, QuickBooks Online excels, though each of the competing accounting sites I've reviewed in conjuction with this review has unique strengths. However, many small businesses simply don't need all of that functionality, and for them, its competitors may actually be better choices, unless rapid expansion is imminent.

We reviewed Online Plus with Payroll, which is the top-of-the-line solution, but there's a whole family of QuickBooks Online applications that you can subscribe to for as little as $12.95 per month (Online Simple Start, which primarily supports sales functions).

Online Essentials ($26.95 per month) brings in multi-user, more reports, sales tax, billing, and QuickBooks desktop import. Online Plus ($39.95 per month) adds more reports and features like purchase orders, item- and time-tracking, and multiple location support. Even without payroll, this is a higher subscription price than competitors charge, though none of them offers all of QuickBooks Online's extras.

Masterful Navigation and Accessibility
QuickBooks Online scored higher than its competitors because of how it works as much as what it does. Its home page?its dashboard?is more comprehensive than what's offered by the other sites reviewed here. And it, like every other content-centric section of the site (Company, Customers, Banking, etc.), not only presents what's expected there, but it also anticipates other related activities that users may want to pursue at that moment. It doesn't screech to a halt when the current task is completed.

The core elements of the dashboard include abbreviated versions of a to-do list; a graphical snapshot of income and expenses; recent messages from team members; and activity of any kind from other users (transactions entered, deposits made, sign-ins and sign-outs, editing of records, etc.). You can link from any of these to see them in their entirety.

The dashboard also displays context-sensitive help and transaction links. And by clicking on sub-tabs there, you'll find tools and content that might be of interest to someone just starting out, like tutorials (since this is the home page). This tab/subtab navigational theme is carried throughout the site: You click on the Customers tab, for example, to get to your list of products and services, estimates and invoices, customer records, etc. All of the sites reviewed here have excellent user interfaces and navigational schemes. QuickBooks Online, however, has more features and therefore a tougher job to do, interface-wise, yet it still beats the competition.

An Innovative New Tool, and Data Records
One of these subtabs opens the Income List, which is a fairly recent addition to QuickBooks Online. It's a comprehensive list of income-related transactions that can be searched by filters like Type and Payment Status. This is also where you complete batch actions: printing and sending transactions, and printing packing slips. The "Money Bar" across the top gives you instant access to groups of unbilled estimates and time/costs, and unpaid and paid invoices. It's the best one-screen access to sales transaction data that I've ever seen.

One of the things that can make a thorough setup so arduous is the creation of records for customers, vendors and items (and in the version we reviewed, employees). You can import existing lists from QuickBooks desktop, as well as CSV and Excel files (competitors have comparable options as well as their own unique data sources, like Less Accounting's connection to gMail), but if you're starting from scratch or from a paper list, it's a major chore. Kashoo is the closest competitor in terms of the comprehensiveness of customer, vendor and item records. None of the sites offers sophisticated inventory management, just simple descriptions, prices, and corresponding accounts. You can, however, track the number of product units available in QuickBooks Online.

Stuck in traffic? Get select 1 percent of drivers to stay home, says study

If just one percent of drivers from commuter-heavy neighborhoods stayed off the road during rush hour, traffic congestion for everyone else would drop up to 18 percent, according to a first-of-its-kind analysis of cellphone data.

The finding provides a?convincing incentive for ?people in specific neighborhoods to take the bus, carpool or work from home, according to research leader Marta Gonzalez, a civil and environmental engineer at the Massachusetts Institute of Technology.?

Simply asking people in general?to take public transit or work remotely is ineffective,?Gonzalez told?NBC News. The study shows that it's best to convince a small number of drivers from a carefully?selected segment of the population to stay off the road during rush hour.

Going forward, the team aims to validate the findings on traffic simulators and then?work with city planners to carry out the one-percent plan ? that is, convince a small number of specific?people to stay home from time to time.

The breakthrough comes thanks to the team's access to cellphone data. Previously, studies like this relied on travel diary surveys, which limited the data to a?tiny fraction of commuters and a single day.?The cellphone data, by contrast, allowed the researchers to analyze trips taken by 100,000 people over the course of several weeks.

?That gives us very good statistics of the flows and, more importantly, if you see a congested street you can have a good estimate of where the drivers are coming from and that connection is what allowed us to design the strategy,? Gonzalez said.

She and colleagues analyzed three-weeks-worth of anonymous cellphone data from Boston and San Francisco to obtain information about drivers? routes, traffic volume, and speed on those routes. They were also able to determine the drivers? neighborhoods.

All of this data was combined with information on population density and the location and capacity of roads in the two cities. This allowed them to determine which neighborhoods are the largest sources of drivers on each road segment, and which roads these drivers use.

By cancelling one percent of trips by select drivers in a handful of neighborhoods in Boston would reduce traffic in the region by 18 percent. In San Francisco, the effect was a 14 percent reduction in congestion.

The data itself was made available to the researchers from mobile carriers, who collect the?information for billing and planning purposes. For example, knowing where most of their users travel in a day helps carriers decide where to build more cellphone towers, Gonzalez explained.

Her team's use of the data was subject approval of a review board that assured?the study did?not invade the privacy of individual users. ?We are not allowed to make a study that can follow individuals,? she noted.

Since the methodology of the study requires only access to anonymous cellphone data, information on population density and a road map, it can be easily replicated around the world, which the researchers are now doing with an aim to reduce traffic in?fast-growing cities.

The findings are reported today in the journal Scientific Reports.?

Group: Israel broke law by targeting media in Gaza

JERUSALEM (AP) ? Human Rights Watch says Israeli army attacks on journalists and media facilities in the Gaza Strip during last month's military operation violated the laws of war.

Two Palestinian cameramen were killed and at least 10 media personnel were wounded in the offensive, which was launched after weeks of rocket attacks on Israel. The Israeli government says each of the targets was a legitimate military objective.

A statement released Thursday by the New York-based rights group says it found no indications that these targets were valid military objectives.

Sarah Leah Whitson, the Mideast director at HRW, says that "just because Israel says a journalist was a fighter or a TV station was a command center does not make it so."

The Israeli military had no immediate comment on the report.

Your needs will change over time, the result of growth, new requirements from customers and suppliers, and changing tax rules. Your customer base will evolve-and the list goes on. And because your ERP solution is at the heart of your business, it's important to choose a vendor that not only meets your needs right now but, equally important, delivers quality, affordable service and support after the sale. Here are three specific points to check out.

  • Customer churn rates. Is the vendor losing current customers as fast as they add new ones?
  • If needed, is support available locally, either directly from the vendor or through a network of qualified local resellers? Or can they successfully service you with online support? If the answer is "no," you could be surprised with added costs when you need after-sale support.
